Y'all, I can't believe it's officially summer! It seems like this year has just flown by!
My husband and I just recently had a conversation that we thought it was going to be a pretty mild summer this year in Texas because it really hasn't been that hot here... WELL, as the first day of summer approached, that quickly changed, lol! This past week it has been SO HOT! Like the kind of hot that makes you second guess living in Texas, haha.
When it gets hot like this there are two things that I start craving... iced tea and fruit! I pretty much make fresh iced tea on the reg during the summer time. It's just so refreshing, and a great break from water ;)
As far as fruit goes, I normally love pineapple, mango, and strawberries during the summer, but now have a few new faves to add to my list now!
I've been trying to come up with creative healthy snacks to munch on this summer, and this watermelon salad is my new fave! Believe it or not, I have actually always hated watermelon. I know that sounds crazy, but apparently my taste has changed because I crave it now!
So here is the simple recipe to my watermelon summer salad:
1 small watermelon
Fresh mint leaves
Juice of 1 lime
There is no intricate way to assemble this salad. Ya just cut it all up and throw it all together, and VOILA!
So yummy and refreshing!
This would also be a perfect dish to take to any summer gathering, potluck, or party!
